Pumpkin Pie Pizzelle

Pumpkin spice and everything nice, now in pizzelle form! Crisp, light, and perfectly spiced-fall vibes in every bite.

Ingredients

  • 1 cup of all purpose flour
  • 1/4 cup of unsalted butter, melted
  • 1 large egg
  • 1/4 cup of pumpkin puree
  • 1/2 cup of granulated sugar
  • 2 teaspoons of pumpkin pie spice
  • 1 1/4 teaspoons of baking powder
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • Confectioners sugar, for garnish
  • Cinnamon, for garnish

Instructions

  • In a large mixing bowl, whisk together egg, pumpkin purer and sugar until smooth. Add melted butter and vanilla until combined.
  • Combine flour, salt, pumpkin pie spice and baking powder and, with a spatula, fold into the egg mixture until well combined.
  • Preheat your pizzelle iron to medium heat and brush with vegetable oil.
  • Using a piping bag or Ziploc bag, or with a tablespoon, pipe about 1 tablespoon of batter onto the center of the iron and cook according to your product instructions.
  • Remove the hot pizzelle onto a cooling rack. Garnish with confectioners sugar and cinnamon. Store at room temperature. Serve immediately.
