Pizzelle
A staple for Christmas, this classic anise-flavored* beautiful and light Italian cookie evokes so many childhood family holiday memories. All you need are 6 ingredients and a pizzelle maker. These cookies are perfect for gifts as well as they stay fresh for up to 2 weeks. *Anise is a common flavor, but you can also use vanilla, almond, lemon or orange oils or extracts.
Ingredients
- 2 cups of all-purpose flour
- 1 cup of granulated sugar
- 4 eggs
- 3/4 cup of butter, melted and cooled
- 1 tablespoon of anise extract
- 1 jigger of Sambuca, optional
- 2 teaspoons of baking powder1 pinch of salt
Instructions
- Preheat pizzelle, iron and lightly brush with vegetable oil
- In a large bowl, combine flour, sugar, butter, eggs, anise extract, baking powder and Sambuca. Drop a rounded tablespoon of batter in the center of each onto pizzelle outline on the pizzelle iron and close.
- Bake as directed by the manufacturer or until golden brown – 30 seconds to 1 minute. Carefully remove each pizzelle with a spatula to a cooling rack. Once cool, break off the ends of any irregular ones that the batter may have traveled off the pattern. Repeat with remaining batter.
- Cool completely and dust with powdered sugar.
