Fried Baccalà
Classic fried baccalà, it's not an Italian-American Christmas Eve without it. A true labor of love, this salted cod is fried golden brown, crispy and delicious with a simple wedge of lemon and fresh parsley.
Ingredients
- 1 large piece of baccalà, soaked for 3 days, change water 2x per day
- EggsAll Purpose Flour
- Freshly grated black pepper
- Olive Oil
- Lemon wedges, for serving
- Freshly chopped parsley, for serving
Instructions
- Cut the rehydrated baccalà into serving pieces.
- Dip the fish into beaten eggs which are seasoned with black pepper.
- Dredge the baccalà in flour.
- Fry the cod in a pan of sizzling oil until golden brown on both sides, about 3-4 minutes.
- Drain on rack and garnish with lemon and parsley, and extra black pepper, if desired. Serve immediately.
